Instructions
Step 1
Finely chop garlic and finely grate ginger
Step 2
Heat up olive oil in a pot at medium heat and fry garlic and ginger for a minute
Step 3
Add the spices and sear them quickly while stirring
Step 4
Rinse lentils and add to the pot along with the vegetable bouillon, coconut milk and chopped tomatoes. Let it simmer for 30-45 minutes. Stir often, and add ekstra bouillon if its gets too firm
Step 5
Taste with salt and pepper and serve with avocado slices (1/2 per serving) and topped with greek yoghurt, some chili flakes and cilantro leaves.
