Step 1
1. Heat oil in a medium saucepan over medium-high heat, then add carrot and cook 1 minute. Add snap peas; cook until crisp-tender, about 1 minute. Transfer to a bowl and keep warm.
Step 2
2. Return saucepan to heat and add orange juice, salt and pepper; bring to a boil. Add couscous and remove from heat. Cover and let stand 5 minutes. Fluff with a fork, then stir in the vegetables, raisins, cilantro and lemon zest.
