Ingredients

2 Tbspextra virgin olive oil
1red onion
large, chopped
4cloves garlic
large, peeled
1 Tbspgrated ginger
1 tspfreshly ground black pepper
1 tspcumin
½ tspturmeric
½ tspcoriander
1 headkale
washed, deveined, and chopped
2zucchini
large, chopped
2 headsbroccoli
chopped
1 lbcarrots
chopped
4shiitake mushrooms
diced
1 cupcarrot essence
or water
spicy coco sauce
Instructions
Step 1
Put the oil into an 8-quart soup pot with heat on medium.
Step 2
Add the onion, garlic, ginger, pepper, cumin, turmeric, and coriander, and sauté for 1 minute.
Step 3
Then add the vegetables and stir for 1 or 2 min- utes, so that the spice and onion mix is well integrated, and cover the pot.
Step 4
Turn heat to its lowest setting and add the Carrot Essence or water, and let everything simmer for 20 minutes.
Step 5
Finally, add the Spicy Coco Sauce and simmer for an additional 10 minutes, stirring frequently to integrate the flavors.
