Sweet and Sour Tofu Recipe (Vegan)

This Sweet and Sour Tofu is one of my favourite comfort foods ever of my favourite takeout! The tofu is crisp with a perfect texture and the sweet and sour is unbelievably delicious! It comes together quickly and takes amazing as meal prep too!

Ingredients
4 servings
Tofu:
1 x 16 ouncefirm tofu
or extra firm, pressed, and torn into 1 to 2 inch pieces
1 tablespoonsoy sauce
gluten free if needed, or liquid aminos or tamari
1 clovegarlic
minced or grated
ginger
minced
¼ teaspoonsea salt
¼ teaspoonground black pepper
1 Tbspcornstarch
¼ cupketchup
¼ cupvinegar
preferably rice or white
¼ cupwater
½ teaspoongarlic powder
1bell pepper
medium, chopped
½ cuppineapple
chopped, cubed
0.5red onion
medium, chopped
½ tablespoonsesame seeds
for garnish
scallion
chopped, for garnish
Instructions
Step 1
Tear the tofu. Add the soy sauce, garlic powder, sea salt, ground black pepper and cornstarch and toss to thoroughly combine, ensuring all the tofu pieces are covered with the seasonings and the cornstarch.
Step 2
Bake or air fry the tofu
Step 3
Add onion, pineapple and red pepper to a pan. Saute until the onions are translucent and the pineapples are slightly browned, about 5 minutes.
Step 4
In a separate bowl, whisk together the ketchup, vinegar, water, soy sauce, and garlic powder for the sweet and sour sauce and stir together until fully combined.
Step 5
Pour in the sauce over the veggies. Bring to a slight boil, then reduce to a simmer for about 5 minutes until the sauce has thickened up. In the end add the tofu, and stir to combine.
