Instructions

Step 1
Heat oil in a saucepan, add the onion and garlic, cook for 5 min. Add the mince and cumin and cook for a further 5-6 min or until browned all over.
Step 2
Stir in the chopped red pepper, tomatoes, tomato puree, chilli powder and stock and bring to the boil. Reduce the heat and simmer gently for 30 min.
Step 3
Add the beans and cook for 5 min. Meanwhile cook brown rice and serve together when done.
