The Naan Pittas
300gstrong bread flour
½ tspsalt
75mlyogurt
½ tspnigella seeds
150mlwater
room temp
½ tspdry active yeast
½ tspcaster sugar
The Seekh Kebab
500g20% fat lamb mince
1white onion
large
coriander
2red chillies
or green
1lime
8 clovesgarlic
ginger
1 ½ tspsalt
1 Tbspcurry powder
1 Tbspsmoked paprika
2 tspgaram masala
1 tspturmeric
1egg yolk
The Mint Sauce
Instructions
The Seekh Kebab
Step 1
Blend the white onion, remove and squeeze excess moisture out with kitchen roll.
Step 2
Pre chop your ginger into thin slices
Step 3
Return to the blender with the garlic, chopped ginger, Chillies, coriander, and juice of the lime and blitz til there are no big bits
Step 4
Combine with the lamb mince, spices and egg yolk and work the mix to a smooth meaty paste (10 mins)

Set in a bowl in the fridge for 2 plus hours or overnight
The Naan Pittas
Step 6
Combine the water yeast and sugar and let sit for 10 minutes
Step 7
Combine the flour salt yogurt and nigella seeds then mix through the yeast mixture and knead for 10 minutes
Step 8
Set aside in a bowl for an hour at room temp on in the fridge overnight, then split into 4 equal pieces.
Step 9
Form into doughballs then let rise on a floured tray covered with cling film for 1-2 hours til doubled in size

Roll out into circles of even thickness about 20cm in diameter

Either slide into a pizza oven to cook for about 60 seconds til ballooned up, on a pizza stone/steel in a max temp oven for 6-8 minutes, or in a frying pan for 2 minutes a side on high heat

There should be a massive air pocket in the middle
The Mint Sauce

Add everything to a blender and blend til no big bits are left

Adjust the flavour with lime, salt, and sugar to your liking
The Arayes

Cut the naan-pittas into quarters
Step 16
Get a handful of lamb mince and stuff it in the pitta quarters
Step 17
Press it down and fill all the gaps inside the flatbread, and make flat neat edges of meat at the sides
Step 18
Heat up a griddle pan to medium high heat and lay down your Arayes on one of the meat sides. If you have them all next to each other it can stop them falling over

After 2 minutes flip and cook the other meat edge

After another 2 minutes do one of the bread sides, and after another minute do the final bread side for 1 minute
Step 21
Serve them up with the mint sauce and maybe some mango chutney or chilli sauce too!
