Instructions
Step 1
First, add the chicken breasts to a hot pan, and seal on all sides. Once sealed, add a small amount of water, reduce the heat, and cover to steam until cooked.
Step 2
While your chicken steams, finely chop the chilli and ginger. Once chopped, mix with the soy and hoisin. This is your teriyaki sauce.
Step 3
Remove the stems from the greens. Stack and roll the leaves then slice finely into ribbons. Finely chop a clove of garlic.
Step 4
Add water to a saucepan and place on high heat for cooking your noodles. Once your chicken is cooked, transfer to a bowl, and shred with two forks.
Step 5
Add the teriyaki sauce and the shredded chicken back into the frying pan, and bring to a simmer. Cook for 5-10 minutes until reduced.
Step 6
Add your noodles to the water, and cook for 5 minutes.
Step 7
While your noodles are cooking, quickly fry the greens in a little oil with the diced garlic and a generous pinch of salt. After 1-2 minutes, and a splash of water, and cover to steam for 3-4 minutes.
Step 8
Once cooked, drain the noodles and place in a bowl. Finish the greens with a drizzle of sesame oil, and sesame seeds.
