Ingredients
2 servings
2 Tbspbutter
1 Tbspolive oil
2 cupswhite onion
chopped
3cloves garlic
minced
ginger root
1, minced
3 Tbsptomato paste
2 tsppaprika
1 tspground cumin
¼ tspcayenne pepper
1 tspsalt
½ tspturmeric
¼ tspcinnamon
2 cupstomatos
crushed
½ cupcoconut milk
1can chick peas
2 cupsgrated mozzarella cheese
4 Tbspgrated parmesan
4naan
Instructions
Step 1
Heat butter and oil, Sautee onion until translucent.
Step 2
Add garlic and ginger, stir until aromatic
Step 3
Add tomato paste, herbs, Sautee until spices are "toasted"
Step 4
Add crushed tomato and chickpeas. Bring to boil, reduce heat, simmer about 20 minutes with lid
Step 5
Stir occasionally, add coconut milk
Step 6
Simmer with lid off, until thickened to about thick gravy
Step 7
Set oven to 400
Step 8
Lay Naan on sheet, spread a little cheese on Naan before adding Tikka masala. Add more cheese to top.
Step 9
Cook in over for about 15 minutes or cheese is melted and edges of Naan are crisp
