Ingredients
8 servings

2boneless skinless chicken breasts
baked or boiled and shredded

1 tablespoonolive oil

1 cuponion
diced

3cloves garlic
minced

10 ouncesrotel

2 packstaco seasoning

32 ounceschicken stock

3 tablespoonstomato paste

4 cupswater
hot

2cans black beans
rinsed, drained

3 tablespoonscornbread mix
or cornmeal

5corn tortillas
whole, cut into strips

Shredded cheese
to top

sour cream
Optional Garnishes

salsa

avocado

red onion

cilantro
Instructions
Step 1
Add olive oil to frying pan, sauté onion and rotel
Step 2
Add chicken stock, onion, rotel, garlic, chicken to large pot and bring to a boil
Step 3
Add taco seasoning, tomato paste, hot water, black beans
Step 4
Reduce and simmer 45 minutes
Step 5
Mix jiffy mix with small amount of soup liquid and stir, then add to soup
