Instructions
Step 1
Wash all vegetables, cut the onion julienne, the pepper small cubes and smash the garlic gloves
Step 2
Take out the chopped tomatoes from the can and bring the condiments
Step 3
In a high pot heat one Tbs of oil olve or any olive you have. Once hot put the onions and sauté for 10 minutes at a lower temperature mixing constantly.
Step 4
Once the onions got golden add the garlic and cook for one minute than add the chopped tomatoes, the cumin, paprika, pepper and leave to boil until the liquid almost dries out mixing from time to time.
Step 5
Than add approximately 2 litres of water and the lentils. You can add more water if you aim for a more transparently soup, and leave to boil until lentils are soften and you got the desired consistency.
Step 6
Carefully blend the soup while while it it still hot using a chopper
Step 7
Serve in bowls with a splash of olive oil, pepper and parsley (coriander if preferred).
