Chicken Risoni Salad

350gchicken breast
2 tbspsolive oil
1 Tbspmixed herbs
salt
pepper
350grisoni
350gbaby Roma tomatoes
halved
1red capsicum
diced
1red onion
diced
150gfeta cheese
crumbled
3 tbspsfresh basil
finely chopped

Instructions
Step 1
Preheat the oven to 220 degrees Celcius (fan forced). Line a baking tray with baking paper.
Step 2
Place the chicken in a bowl. Add the olive oil and mixed herbs and season with salt and pepper. Toss to coat, then place on baking tray and bake for 20-25 mins until cooked through. Set aside to rest.
Step 3
Meanwhile, bring a large pan of water to the boil and cook the Risoni according to the packet instructions, until al dente. Drain and set aside to cool.
Step 4
In a large bowl mix the Risoni, vegetables, feta and basil. Cut the chicken into cubes and place on top of Risoni salad.
Step 5
Combine the dressing ingredients. Pour over the salad and toss well.
