Ingredients

500gchicken breast fillets

300mlchicken stock

0.33cucumber

4spring onions
trimmed and sliced

1red pepper
deseeded and cut into slices

2baby gem lettuces
trimmed and leaves seperated

1mango
large, peeled, stoned and sliced

crusty bread
to serve
Dressing:
Instructions
Step 1
Put the chicken and stock into a saucepan. Heat until simmering, then cover and cook for 20 mins.
Step 2
Drain the chicken, leave to cool, then slice.
Step 3
Halve the cucumber lengthways, scoop out the seeds and slice into crescents.
Step 4
Divide the lettuce, cucumber, spring onions, pepper, mango and chicken between four plates.
Step 5
Mix the yoghurt, mint, lemon juice and honey together.
Step 6
Drizzle the dressing over the salad.
Step 7
Serve with crusty bread.
