Ingredients

3 cupsfrozen hash browns
¾ cupMonterey jack pepper cheese

1 cupcooked ham
cubed, Canadian bacon, or sausage
¼ cupgreen onion

1 x 12 ounceevaporated milk
can, or 1 1/2 C milk

Instructions
Step 1
Grease a 2-quart rectangular (9x9, etc) baking dish.
Step 2
Arrange potatoes evenly on bottom of baking dish. Sprinkle with cheese, ham, onions.
Step 3
Combine milk, eggs, and seasonings. Pour over potatoes, meat, and cheese.
Step 4
Bake at 350 for 40-50 minutes until set. Let rest 5 minute.
Step 5
NOTES: To double, put in 3-quart rectangle casserole dish and bake for 45-55 min.
Can prep ahead of time and keep in fridge. After assembled, refrigerate, then when ready, bake at 350 for 50-55 min.
Step 6
IN INSTANT POT: Place trivet and 1 C water in bottom of IP, then cover a casserole dish that will fit in IP with foil. Bake at high pressure for about 20 minutes, then naturally release for 10 min. Making a foil “sling” can help get the dish out of the IP (must do at beginning).
