Instructions

Step 1
Add the water, beetroot, miso paste, rice vinegar, soy sauce, nori sheets, garlic powder and sesame oil to a blender and process until smooth. Cover the tofu with the marinade and let it set for at least 2 hours but best overnight
Step 2
Preheat the oven to 200C.

Step 3
Cut nori sheets into 4 equal squares. Add some rice in the middle and press into a muffin tray.
Step 4
Top with some tofu salmon. Cook in the oven for 15 minutes.
Step 5
Top with avocado, sesame seeds, and spring onion, and drizzle some sriracha mayo. Serve immediately to enjoy a crunchy bite and enjoy!
