Instructions
Step 1
In small pot, combine stock concentrate, turmeric, washed rice, and 2 cups of water to a boil. Cover and reduce to low simmer for 15-18 minutes or till rice is done. Remove from heat
Step 2
Thinly slice peppers, dice tomato, thinly slice green onions while rice cooks
Step 3
Heat large drizzle of oil in large pan over medium-high heat. Add green peppers and half of spice, cook 2-3 minutes
Step 4
Pat chicken dry, add remaining seasoning, salt and pepper. Add to pan with peppers and another drizzle of oil. Cook till chicken is done, adding 2 tbsp of butter and stir till melted. Remove from heat.
Step 5
Add 2 tbsp butter to rice, stir till melted. Serve underneath chicken and peppers, with pico de gallo, sour cream & hot sauce.
