2 cupmasoor dal

2 tablespoonsolive oil

1 teaspooncoriander powder

1 teaspooncumin powder

1 teaspoonchili powder

1 teaspoonblack pepper

½ teaspoonTurmeric powder

2red onion

14 ouncescrushed tomatoes

1 ½ teaspoonssalt

1 ½ tablespoonslime juice

2 teaspoongaram masala

Instructions
Step 1
Wash the red lentils (masoor dal) until water runs clear.
Step 2
Chop up the onions, garlic, and ginger. Also chop the tomatoes or use crushed tomatoes.
Step 3
Roast the spices except the garam masala in hot oil. Then add onions to the oil and saute until golden.
Step 4
Then add the garlic and ginger and continue the saute for 1 minute. Then add the crushed / chopped tomatoes and continue saute for 2 to 3 minutes to cook the tomatoes.
Step 5
add 2 to 3 cups water and add the washed masoor (red lentils) bring to boil and simmer covered for 20 minutes.
Step 6
Add additional water if the soup has gotten too thick.
Step 7
Once cooked, add the lime or lemon juice and the garam masala and mix. Then add chopped cilantro and mix.
Step 8
Consider additional herbs and vegetables including thyme, dried fenugreek leaves, carrots, zucchini. Also add additional salt to taste if desired. I prefer my food spicy so I use a very hot chili powder and usually add 1 teaspoon.
Step 9
I also will add crushed red pepper or cook with dried chilis and bay leaves for additional flavor.
