Instructions
Step 1
Heat oil and fry garlic and onion for a couple of minutes, add rest of vegetables. Stir in paprika and chipotle paste and cook for ten minutes
Step 2
Tip in tomatoes and break up with spin, adding in rest of the stock, bring to the boil. Dinner for 45 minutes
Step 3
Add in lentils and beans with coriander, season with salt and pepper and puree and more stock if it looks dry, simmer for 30 minutes
Step 4
Divide between bowls and enjoy as it is or with rice, cous cous, mash or polenta with a blob of coconut yoghurt on the side
