If you want a quick taco recipe then you’ve come to the right place. These taco’s are fresh, vibrant, high in protein and it packs a punch. The pineapple gives a nice fruitiness to it which works wonders.

Ingredients

TOFU:
SAUCE:
1red onion
diced
2garlic cloves
minced
3 Tbsptomato puree
1 tspcumin
1 tspground coriander
1 tsppaprika powder
¼ cuppineapple juice
TOPPINGS:
Instructions
Step 1
Mix the tofu cubes with the cornstarch & oil. Bake in the oven at 200 Celsius for 20 minutes.
Step 2
Meanwhile heat up a non stick skillet. Sauté the onion & garlic until fragrant.
Step 3
Add the spices & tomato puree. Cook it down for 30 seconds before adding the pineapple juice & baked tofu.
Step 4
Let it simmer on low for 10 minutes.
Step 5
Serve on warm taco’s and garnish with the pineapple pieces & cilantro
