Budget Friendly $10 Recipes Episode 3: Tofu Satay Skewers Recipe
So I’ve made these and shared them before, but this time I have tweaked the ingredients slightly to make it an extra budget friendly recipe! The swaps I made were switching yogurt for coconut cream and coconut sugar for brown sugar. So you can use those if you have them on hand instead 😁
This easy vegan recipe is perfect for meal prep or for an easy midweek dinner idea. The skewers are so delish but the sauce will blow your mind. Soooo good!

450gfirm tofu
block
⅓ cupcoconut cream
2 Tbspred curry paste
1 Tbspcurry powder
1 Tbspbrown sugar
1 Tbspsoy sauce
2 Tbspwater
Peanut Sauce Ingredients
Instructions
Step 1
Break up the tofu into small bite size pieces - place 4 - 5 pieces on bamboo skewers (I bought the 16cm bamboo skewers from woolies)
Step 2
Mix together the rest of the tofu skewer ingredients and marinated the tofu for a few hours or overnight in the fridge (if you cbf marinating just cook them straight away like I usually do haha)
Step 3
Grill in a pan with oil for a couple of minutes on each side, until crispy
Step 4
To make the peanut sauce, add all the ingredients to a small pot or pan and simmer for 5 minutes
Step 5
Serve the tofu with the peanut sauce, rice, crushed peanuts, cucumber, chilli and coriander if you have it!
