Instructions
Step 1
Brown ground sausage, add the minced garlic at the end of cooking until the garlic is fragrant (1-2 minutes).
Step 2
While browning garlic add beef broth, V8 in a large separate pot and start to heat.
Step 3
Cut veggies and add to the boiling water, just to soften them a bit.
Step 4
Let them boil for 2-3 minutes then add the cans of beans and tomatoes.
Step 5
Add browned Sausage and salt and pepper to taste.
Step 6
Turn heat to low.
Step 7
I try to let all the ingredients sit together on low for about 15 minutes so the flavors blend.
Step 8
You can serve immediately if needed.
Step 9
I also like to garnish with Parmesan cheese.
Step 10
This soup also freezes well.
