Garlic Chili Sauce
Instructions
Okra
Step 1
Wash the okra and leave to soak in a bowl of salt water for 10 minutes.
Step 2
Rub each okra with your hand to remove the fine hairy stuff on the surface.
Step 3
Remove the okra and wash again under running water and drain.
Step 4
Bring a pot of water to a boil, add some salt and then blanch the okra for about 2 minutes until cooked.

Remove the okra and place them in a bowl of cold water immediately.
Step 6
Once the okra is cool, remove and drain.
Step 7
Place the okra on a chopping board and cut off both ends. Cut in half and arrange the okra on a serving plate.
Garlic Chili Sauce

Coarsely chop the garlic.
Step 9
Slice the chili and remove the seeds. Then cut the chili into small pieces.
Step 10
In a small pan over medium heat, heat up the oil. Then add the garlic to the oil and saute for a minute.
Step 11
Add the chili and saute further until the raw taste of the chili is gone.
Step 12
Switch off the stove and add the light soy sauce, black vinegar, sugar, oyster sauce, and salt. Mix well.
Step 13
Turn on the stove over low heat until the mixture starts to boil. Remove from heat.
Step 14
Add a slice of thinly sliced spring onion to the sauce mixture. Mix well and it is ready for use.
