Trejo's Basic Black Beans

Ingredients

1 pounddried black beans

2 tablespoonsolive oil
pure

0.5white onion
medium, or yellow, chopped

1celery rib
chopped

0.5jalapeno
medium, chopped

2cloves garlic
chopped

1dried chile de arbol

2 teaspoonsground cumin

1 teaspoondried oregano

0.5cinnamon stick
about 1 inch long

1dried bay leaf

kosher salt

1 teaspoonblack pepper
freshly ground, plus extra to taste

1carrot
medium, chopped
Instructions
Step 1
Put dried beans in large bowl. Add tepid water to cover by at least 2 inches. Soak at room temperature at least 3 hours, or as long as overnight.

Step 2
In a large pot, heat the oil until shimmering but not smoking, about 2 minutes.
Step 3
Add the onions, carrots, celery, jalapeno, and garlic, and cook, stirring occasionally, until vegetable are soft (not browned).
Step 4
Drain the beans. Add them to the pot along with the chile and seasonings. Add cold water to cover by at least 2 inches.
Step 5
Turn heat to high. Bring the water to a boil, then reduce heat to med-low. Simmer 45 minutes to 1 hour, until beans are tender, adding water as necessary.
Step 6
Taste; adjust seasonings. Remove chile de arbol, bay leaf, and cinnamon stick before serving. Can be refrigerated up to 3 days.
