This is hands down one of my favorite lunches to meal-prep because it becomes better with time. Packed with nutrients and affordable!

Instructions

Step 1
First, cook the pasta according to the package instructions, rinse it and cool it down.
Step 2
In the meantime, prep your veggies. Chop all ingredients small enough to be spoonable. We want everything to combine in a cohesive eating experience.
Step 3
Make the dressing by combining all the ingredients that are listed. Make sure to aim for a thicker dressing because we want it to act as glue between all the ingredients.
Step 4
In a large bowl, mix everything together, starting with small amounts of dressing and adjusting later.
Step 5
Season with salt and pepper to taste and you're done!!
