Instructions
Step 1
Cook the pasta to packet instructions in salty water and save a cup of pasta water for the sauce.
Step 2
In a pan, heat 1 tbsp of olive oil and sweat the red onion down in a little salt for a few minutes.
Step 3
The add the chilli, garlic, basil stems, red pepper, sun dried tomatoes and cherry tomatoes.
Step 4
Cook for 5-10 minutes adding a few tablespoons of water to prevent the mix from burning until the tomatoes are soft and burst by pressing with the back of a spoon.
Step 5
Crush each of the tomatoes to release their juices and 1/2 tsp of smoked paprika and 1 tbsp of tomato purée.
Step 6
Simmer for a few minutes and then add fresh spinach and basil. Mash the feta into the sauce and then combine.
