Whole30 Unstuffed Pepper Skillet

This is an easy weeknight meal that allows you to enjoy the taste of stuffed peppers without any rice/grains or dairy. Not to mention it removes the process of having to blanch, stuff, and bake the peppers!

Ingredients
4 servings
2 Tbspolive oil extra virgin
1 lbground beef
or meat of choice - pork or turkey would also work!
0.5onion
chopped
2peppers
any color, chopped into 1 inch pieces
2garlic cloves
minced
1 x 24 ozMarinara Sauce
Homemade, or any sugar-free tomato sauce
1 bagfrozen riced cauliflower
1 tsporegano
1 tspsea salt
½ tspblack pepper
1 tspthyme
red pepper flakes
to taste
2 Tbspnutritional yeast
optional - gives it a cheesy flavor
1 Tbspcoconut aminos
optional - gives it a bit of sweetness
Instructions
Step 1
Heat 1 tbsp olive oil over medium heat.
Step 2
Add ground beef and cook 5-7 minutes until browned and cooked through. Remove from pan using a slotted spoon, and set aside.
Step 3
Add another tbsp of olive oil to the hot pan and add peppers, onions, and garlic. Saute until they begin to become translucent.
Step 4
Add in the riced cauliflower along with the salt, pepper, oregano, thyme, red pepper flakes, and nutritional yeast.
Step 5
Sautee until the rice begins to soften, then add the ground beef back into the pan.
Step 6
Add the jar of marinara sauce, stir to combine, and simmer for 10-15 minutes.
Step 7
Serve with fresh basil on top. Enjoy!
