For the cornflake coating
For the chicken
For the burgers
Instructions
Step 1
Preheat the oven to 180fan.
Step 2
Take the cornflakes and crush them until they are mainly a powder but the are still some larger flakes to add a crunch to the chicken. ( I sometimes use a stick blender for parts of this)
Step 3
Mix the eggs, milk and however much hot sauce you want depending on how spicy you want the chicken until the eggs and milk are combined
Step 4
Prep a baking tray with grease proof paper for the chicken
Step 5
Take your chicken thighs and dip them in the egg and milk mix and then coat them in the cornflakes and place on the baking tray
Step 6
Bake for 15-25 minutes or until crispy and cooked through
Step 7
Server in buns with spicy mayo and/or cheese
