Instructions

Step 1
Drain and press tofu
Step 2
Peel and finely slice onion
Step 3
Combine 3 tbsp cold water with harissa paste, turmeric and pinch of salt and pepper in a small bowl.
Step 4
Add a little oil to frying pan on medium heat, add onion to pan and fry for 5 mins. Stir frequently.
Step 5
Crumble tofu into pan. Pour harissa mixture over. Fry for 7 min until moisture evaporated, stirring frequently.
Step 6
Serve the scramble topped with rocket
