Instructions
Step 1
preheat oven to 180oC

Step 2
heat oil in a large pan over medium heat and fry spring onions until softened, about 5 mins




Step 3
stir in the garlic, chilli and cumin and cook for 1 min



Step 4
Add the harissa and tomatoes


Step 5
bring to the boil and simmer for 15-20 mins, until reduced
Step 6
gradually add in the spinach until incorporated and wilted

Step 7
add in most of the herbs and check seasoning


Step 8
transfer to baking dish

Step 9
make 8 wells and crack in the eggs

Step 10
cook in oven for 10 mins until egg whites are set
Step 11
scatter over feta, remaining herbs and serve with flatbread
