Instructions

Step 1
-Finely dice onion Add onion and a drizzle of oil to med/large sauce pan and fully caramelize (about an hour but it’s worth it)
Step 2
Add thinly sliced mushrooms to pan and cook on medium until mushrooms are brown and fully cooked
Step 3
Add all seasoning’s to the pan and maple syrup and vinegar
Step 4
Create a flour slurry by wisking water and flour together
Step 5
Add slurry, Greek yogurt, vegetable stock and water to soup and bring to boil (make sure these ingredients fully combine into the soup)
Step 6
I like my soup every concentrated so add water to your discretion. This soup is a very tasty noodle-less mushroom stroganoff taste. The Greek yogurt could probably be substituted with sour cream and any vinegar in place of rice vinegar.
