Instructions

Step 1
Bring a kettle of water to the boil and place the noodles in a heatproof bowl.
Step 2
Meanwhile, mix together the lime juice, soy sauce, brown sugar and chilli flakes. Leave to one side - this is your Pad Thai sauce.
Step 3
Pour the boiling water over the noodles and leave for 10 minutes until softened.
Step 4
Meanwhile, slice the pak choi, garlic and red pepper. Melt the coconut oil in a wok or frying pan over a high heat. Chuck in your pak choi, garlic, pepper and the mange tout. Stir-fry for 2 minutes. Push the one side, then pour in the egg and stir-fry for a minute or so, using your spoon to scramble. Take the pan off the heat for a second.
Step 5
Drain your noodles and chuck them into the pan along with the Pad Thai sauce and beansprouts. Place the pan back on the heat and cook for 2 minutes until everything is heated through. Top with the peanuts.
