Ingredients
2 servings
2 teaspoonscoconut oil
0.5red onion
chopped
1garlic clove
crushed
0.5red chilli
finely chopped
3quorn mince
palm size and thickness of
0.5red pepper
deseeded and finely chopped
6cherry tomatoes
finely chopped
1 tablespoontomato purée
½ teaspoonground cumin
1juice of lime
1 tablespooncoriander
fresh chopped
1 tablespoonraisins
2 leavesiceberg lettuce
2wholemeal wraps
2 tablespoonscoleslaw
Instructions
Step 1
Fry the chopped onions, the garlic and chilli in the coconut oil on a medium heat for a couple of minutes until starting to soften.
Step 2
Now add the Quorn mince, cumin, pepper, tomatoes, tomato purée, a tiny splash of water if needed and combine thoroughly.
Step 3
Stir fry for approximately 10 minutes and then add the lime juice, coriander and raisins.
Step 4
Give it all another big stir and turn the heat down to its lowest.
Step 5
Now heat your wraps however you wish then fill with lettuce, a tablespoon of coleslaw and half of the mixture in each.
Step 6
Wrap it all up and enjoy
