Instructions

Step 1
Prep ingredients by dicing your onion, bell peppers, potatoes, and bacon.
Step 2
Heat a sizeable pan using medium-high heat. Cook bacon & breakfast sausage until bacon is crispy & sausage is cooked through. Works best if you cook sausage and then bacon, but can combine if in a hurry. Set aside.
Step 3
Deglaze with bourbon. Add the potatoes & onions to the pan to cook in the fat from the bacon and sausage. Add about 2 tablespoons of water & cover with the lid to let potatoes cook. Add peppers & season with thyme, smoked paprika, and chipotle powder (add red pepper & cayenne if you want spicy). Cook for about 10 minutes or so until the potatoes are cooked through. Remove lid and continue to cook while you make eggs.
Step 4
Add meat back into the potato and veg party. Make sure all parties get to know each other. In another pan, cook number of eggs of your choosing). I recommend over easy so the yoke acts as a sauce, but you do you man.
Step 5
Once eggs are done add eggs to the party, top with cheese and hot sauce, if you dare, and serve.
