Instructions

Preparation

Step 1
Soak noodles in room temperature water until noodles turn from translucent to completely white (>1h)
Step 2
Roast peanuts in pan or oven, crush in mortar; set aside
Step 3
Prepare prik nam pla
Step 4
Dissolve palm sugar in small amount of water by heating until brown and viscous
Step 5
Add palm sugar syrup to remaining seasoning ingredients, mix ​and set aside
Step 6
Wash and cut/prepare all other ingredients

Stir-frying

Step 7
Heat up wok to medium/high heat and add oil
Step 8
Stir fry garlic, tofu and shrimps/meat (if used)
Step 9
Stir in half of the noodles
Step 10
Scoot to side, add eggs, scramble, stir egg until done, then mix with noodles
Step 11
Stir in remaining noodles with the seasoning
Step 12
Turn off heat and stir in shallots, bean sprouts, garlic chives & crushed, roasted peanuts

Serving

Step 13
Serve bean sprouts, chives, crushed, roasted peanuts, a wedge of lime and prik nam pla
