Instructions

Step 1
1. Blend all ingredients except for blueberries and lemon zest in a blender to ensure fully combined. (Can also hand mix)
Step 2
2. Turn a pan on low heat and grease.
Step 3
3. Seperate batter into 4-5 medium sized pancakes- adding blueberries immediately after pouring mixture into pan.
Step 4
4. Wait until bubbles first start to form and flip.
Step 5
5. Serve with lemon zest, more blueberries & liquid sweetener of choice ( I used sugar free vanilla maple syrup).
