Cajun Tofu with Swiss Chard

Instructions

Step 1
Preheat oven to 425 F. Line a baking sheet with parchment paper.
Step 2
Drain tofu and pat dry. Cut into 1 inch cubes.
Step 3
Transfer to a bowl and toss with all of the spices and 2 tble olive oil and cauliflower pieces.
Step 4
Place in a single layer on the baking sheet. Bake for 20-30 minutes.
Step 5
Meanwhile, in a skillet over medium-high heat, add the remaining olive oil, shallot and garlic. Cook for 3-4 minutes.
Step 6
Add the swiss chard and cook until it is wilted, about 2-3 more minutes.
Step 7
Add the coconut milk and nutritional yeast. Let simmer 3-5 minutes.
Step 8
Remove the tofu from oven when done. To serve, divid both the chard and tofu in half and enjoy!
