Instructions
Step 1
In a large saucepan on medium- high heat, sautée the oil, carrots, celery, onions, and bay leaves for about 5 minutes.
Step 2
Add ground chicken and cook thoroughly.
Step 3
Add the stock and bring to a boil.
Step 4
Add the red lentils and potatoes.
Step 5
Reduce heat and simmer for 25-30 minutes until the lentils and potatoes are cooked.
Step 6
Add vinegar or lemon juice.
Step 7
Remove bay leaves. Season to taste with salt and pepper.
