Instructions

Step 1
In a medium saucepan, heat the olive oil over medium heat.

Add the carrots and leeks.
Step 3
Sauté until the vegetables have softened, about 5 minutes.

Add the chicken and herbs to the pan, sautéing for 5 to 7 minutes, or until the chicken is lightly browned and the internal temperature reaches 165°F.

Add the potatoes, parsnip, and enough water to just cover the contents of the pan.
Step 6
Cover and simmer for about 15 minutes, or until everything is fork-tender.
Step 7
Transfer all of the ingredients to a blender and puree until the desired consistency is reached, adding more water as necessary.
Step 8
Store leftovers in a sealed con- tainer in the refrigerator for up to 3 days or freeze for up to 3 months.
