I found inspiration for this recipe from Adam Ragusea and made with few modifications made such a tasty asian stew that is really easy to make.

Instructions

Step 1
Prepare a broth. Put all ingredients in a large pot, add water and let it boil. Decrease the temperature and cook for a minimum of 30 min.
Step 2
Remove all vegetables from the soup so you have clean broth
Step 3
If you are using dried seaweed put it in cold water for 10 minutes. Also I advise you to cut it in small cubes before putting it in the pot
Step 4
Add carrots and parnsip together with seasoning (soya sauce, mirin, rice vinegar) to the broth. Add any additional water if needed
Step 5
After some 10 minutes add broccoli and cauliflower.
Step 6
Last add seaweed, chilli, spring onions and mushrooms. I used enoki mushrooms.
Step 7
So for garnish I used lime juice, black sesame seeds, fresh mint but it is per individual liking
