Vegan beef stew

Stew pots are perfect for the colder time of year. Such a big pot on the table looks super cozy and your house smells delicious because the stew is simmering for a while. This vegetarian dish is super easy to make and therefore ideal for when you have guests over (during the holidays!).

Instructions

Step 1
Roughly chop the 1/2 onion and shallots (without the peel) and sauté in 2 tbsp olive oil in a large pan for 5 minutes. Add some ground pepper, pinch of salt and a pressed garlic clove.
Step 2
Slice the carrot and coarsely chop the forest mushrooms. Add this to the pan and stir well for 10 minutes.
Step 3
Now add the red wine, vegetable stock, 1 tsp flour, dried plums and sprigs of thyme. Mix everything together well.
Step 4
Turn down the heat, place the lid on the pan and let it simmer for 30 minutes. Stir halfway through.
Step 5
After half an hour, add the seitan and cook for another 5 minutes.
