Instructions
Step 1
Heat the oil in a large frying pan over medium heat. Add the onion and bacon and cook for 5 minutes, until the bacon is crisp.
Step 2
Add the potatoes, bell pepper, cumin and paprika and fry, stirring regularly for 10 mins or until the potatoes are golden brown. Remove the potato mixture from the pan and put aside.
Step 3
Gently break the eggs into the pan. Return the potato mix to the pan, placing it carefully around the eggs.
Step 4
Sprinkle the cheese over the top, around the eggs, and cook on med-high for 1 minutes or until the eggs are cooked the way you prefer them.
Step 5
Season with salt and pepper, garnish with chopped parsley, and serve.
