Chop the onion, garlic, and bell pepper into smaller pieces.

To a blender or food processor, add the chopped vegetables, the fresh herbs, and blend until smooth.

Reserve one spoonful to season the chicken. The rest may be frozen and used in a variety of dishes at any time. If unable to make green seasoning, Italian seasoning may be subbed for herbs.

Dice chicken into smaller pieces

Season chicken using pre-made green seasoning, tomato paste, and seasonings. (You can use Italian seasoning here if you are unable to make the "green seasoning".)

For the stew

In a pot on medium-high heat, add vegetable oil. Once oil is hot, but not smoking, add sugar, and stir until golden/ dark brown. Do not let sugar burn, or else the stew will not come out right.

Add chicken to pot and cook for 5 minutes. (If using Italian seasoning instead of "green seasoning", add the onions and peppers first and cook until fragrant, before adding chicken. Add garlic last, after chicken is cooked so it doesn't burn.

While chicken is cooking, peel and cube potatoes. Add potatoes to the pot, add water, and reduce heat to low-medium. Cook for 45 mins, checking halfway through to see if additional seasonings or water is needed.
