Roasted Orange Tilapia and Asparagus

Roasting asparagus in the oven really concentrates the flavor and retains the nutrients. Any mild white-fleshed fish can take the place of the tilapia.

Instructions

Step 1
Preheat the oven to 375°F. Coat a 9” x 13” baking dish with cooking spray. Add the orange juice, oil, garlic, herbes de Provence, salt, and pepper. Stir to mix. Place the fish in the pan.
Step 2
Cut the asparagus into 1½” pieces. Place in the pan around the fish. Flip the fish twice and stir the asparagus to thoroughly coat with the orange mixture.
Step 3
Bake for 15-20 minutes or until the fish flakes easily with a fork, stirring the asparagus once or twice. Serve garnished with orange slices and drizzled with the pan juices.
