Step 1
Put the milk & bay leaf in Saucepan on very low heat cover & infuse for about 7 minutes.
Step 2
Melt butter in thick saucepan, remove from heat, add flour. Cook mixture for a minute or two, stirring well with wooden spoon. Remove bay leaf from milk, cool slightly, then poor all at once onto flour mixture. Blend thoroughly & stir constantly over moderate heat until boiling. Simmer 2-3 minutes, add salt & pepper to taste. Add egg yolks & grated cheese, beating after each addition. Add cream & nutmeg, taste & adjust seasoning. Whip egg whites until they stand in stiff peaks and fold gently but quickly into mixture. Turn into prepared souffle dish, sprinkle with mixed cheese & breadcrumbs. Bake in moderately hot oven (190°c) for 30 minutes. Serve immediately. Serves 4.

Variations:- Herb: Prepare souffle mix, fold in I spring onion finely chopped, I tablespoon chopped herbs. Any combination chives, parsley, marjoram, oregano.
Step 4
Cheese &Mushroom: Make cheese souffle, Sauté 4oz (120g) chopped mushrooms in a little butter. Half fill souffle dish with cheese souffle, scatter over mushrooms, fill with remaining mix, top with cheese & buttered crumbs & bake. (Then call me! Love, Nona)
