Ingredients
3 servings
2 cupsrice
precooked and cooled
2eggs
beaten
Chicken thighs
or shrimp, kielbasa, beef
0.5bell pepper
1 cupcabbage
or brussel sprouts, bok choy, gai l’an
1 inchginger root
minced
2green onions
2carrots
diced
¼ cupfrozen peas
Mushrooms
optional
Bean sprouts
or water chestnuts, optional
1 Tbspbutter
1 ½ Tbspsoy sauce
1 tspsugar
1 tspsesame oil
3 dashesSherry
½ tablespooncanola oil
Instructions
Prep work
Step 1
If rice isn’t already cooked, cook rice with slightly less water than normal. Then remove from heat and let cool until ready to use
Step 2
Mince ginger and scallion whites and set aside. Chop all vegetables into similar sizes. If using chicken, beef or pork, optionally velvet with water, soy and corn starch.
Stir Fry
Step 3
Stir fry protein in oil over high heat until almost done, then remove (unless using kielbasa)
Step 4
Add oil to wok and sautée ginger and onion until aromatic and slightly golden over medium high heat.
Step 5
Add in all heartier vegetables (bell pepper, carrot, bok choy stems etc) and stir fry for several minutes. Add in kielbasa as well, if using. Add any leafy vegetables and cook for 1 min, stirring constantly. Deglaze edges with splash of sherry and give a quick stir.
Step 6
Add rice to wok and begin stirring in with everything else. Then add butter and stir fry rice over high heat constantly until butter is completely incorporated and rice is sizzling.
Step 7
Add back in protein and scallion greens. Sprinkle sugar on top and add soy until rice starts turning a deeper color. Add in chili oil and sesame oil and stir fry for several minutes to fully incorporate.
Step 8
Push all rice aside and add egg to edge and scramble immediately in pan. Once egg is cooked, cut into pieces with spatula and mix into rice.
Step 9
Serve immediately. Top with extra sesame oil, sesame seeds and sriracha if wanted.
