I can't remember where I found this recipe but it is not originally mine.

Instructions

Step 1
Place all ingredients together in a blender and blend on high until combined and smooth.
Step 2
Let the batter rest for about 5 minutes to allow it to thicken up a bit.
Step 3
Heat a non-stick pan over medium-high heat then spray with cooking spray. Pour batter into the pan to create 4 inch round pancakes.
Step 4
Cook until they begin to bubble and then flip. Allow them to cook for about 30 seconds or until cooked through. Remove from pan. Serve with favourite toppings.
