Freekeh (green wheat) and quinoa bread

Delicious, nourishing, flour-free, whole food plant based bread. The original recipe called for Buckwheat (I have lost the source or I would have quoted it), but I then tried it with Freekeh instead (green wheat) and loved it even more.

Instructions
Step 1
Soak the freekeh (or buckwheat) and quinoa together in at least enough water to cover them, for at least a couple of hours. Do not pre-cook it.
Step 2
Preheat the oven to 180°C. Drain the freekeh and quinoa, then add all the other ingredients and mix well.
Step 3
Let the mixture rest for another 10 minutes or so to allow the water to be absorbed by the chia seeds.
Step 4
Bake in a silicone bread tin for around an hour, or until a skewer comes out clean.
