Ingredients

1 cupjasmine white rice
cooked

12 ozchicken breast
raw

cumin

paprika

cayenne pepper

garlic powder

onion powder

sea salt

pepper

2 Tbspolive oil
or avocado oil

2 cupsyellow onion
sliced into rings

2 cupsbell peppers
sliced

butter lettuce
cups

1 cupblack beans
rinsed and drained

½ cupfresh salsa

160gguacamole

4 TbspGreek yogurt nonfat plain
Instructions
Step 1
Cook the rice. Slice the onion into rings.
Step 2
Heat large skillet over medium/high heat. Grease with cooking spray. Add chicken strips to the skillet and a dash of all the spices. Cook for about 5 minutes on each side, stirring often or until fully cooked through. Remove from pan.
Step 3
Add the olive oil to the skillet along with the peppers and onions. Cover and cook for about 5-10 minutes, stirring occasionally until veggies are soft and fragrant.
Step 4
Lay out 2-3 butter lettuce cups and evenly distribute 2.5 oz cooked chicken, 1 cup cooked veggies, 1/4 cup cooked rice, 1/4 cup black beans, 2 Tbsp salsa, 40g guacamole and 1 Tbsp greek yogurt per serving.
