Marinated Tofu Italian style

This Tofu is fantastic in sandwiches, over rice, with stir fry veggies, etc. I like to pour the extra marinade over frozen broccoli and bake it at the same time. Note that the health score isn't accurate as it assumes you're consuming the whole marinade, but after marinating tofu and dunking broccoli, there's plenty left to discard.

Instructions
Step 1
Combine all marinade ingredients in a large shallow bowl. (I prefer a glass baking pan.)

Step 2
Cut Tofu as desired. The recipe recommends just 4 pieces of you're grilling it. For baking and having on hand for sandwiches, I prefer 6-8 slices. More surface area = more flavor.


Step 3
Marinate Tofu at least an hour, flipping after 30 min
Step 4
Preheat oven to 400F

Step 5
Arrange tofu on a baking sheet and bake for 20 min. Flip and bake for 10 more min. Broil for 3 min if desired.
