According to History Benachin originated from the Wolof region of Senegambia. This is a special traditional dish cooked in weddings and all types of ceremonies.

Instructions

Step 1
Season chicken with a pinch of salt.
Step 2
Blend all the ingredients except chicken, rice, oil, aubergine, carrots and scotch bonnet.
Step 3
Add 1 tablespoon of oil in the Saucepan add chicken, flip it over till golden brown, set it aside
Step 4
Add rest of the oil and add tomato puree and the rest of the blended ingredients stir for five minutes
Step 5
Add 300ml of boiling water and the chicken, carrots, aubergine and scotch bonnet and boil for 10 minutes
Step 6
Take everything out of the saucepan and add the basmati rice, cover and cook for 10-15 minutes. Alternatively, cook the basmati rice in a separate pan for 10-15 minutes. Serve the dish piping hot.
