Gambian Chicken Jollof Rice

Benachin/Jolof Rice is a Gambian classic - In Wolof Benn chin ("cooked in a single pot"), it is a popular dish in West Africa. According to History Benachin originated from the Wolof region of Senegambia. This is a special traditional dish cooked in weddings and all types of ceremonies.

Ingredients
6 servings
1whole chicken
jointed or use 1kg of chicken pieces, thighs or legs
5 Tbsvegetable oil
500gbasmati rice
200gtomato puree
1onion
chopped
5garlic cloves
1scotch bonnet
finely chopped
1carrot
diced
1aubergine
diced
2spring onions
chopped
3mixed sweet peppers
chopped
3bay leaves
1chicken stock cube
salt
400gtin plum tomatoes
Instructions
Step 1
Season chicken with a pinch of salt.
Step 2
Blend all the ingredients except chicken, rice, oil, aubergine, carrots and scotch bonnet.
Step 3
Add 1 tablespoon of oil in the Saucepan add chicken, flip it over till golden brown, set it aside
Step 4
Add rest of the oil and add tomato puree and the rest of the blended ingredients stir for five minutes
Step 5
Add 300ml of boiling water and the chicken, carrots, aubergine and scotch bonnet and boil for 10 minutes
Step 6
Take everything out of the saucepan and add the basmati rice, cover and cook for 10-15 minutes. Alternatively, cook the basmati rice in a separate pan for 10-15 minutes. Serve the dish piping hot.
