Instructions
Step 1
Peel and cube potatoes
Step 2
Add the potatoes to a pot of salted boiling water. Cook for 10 minutes or until fork-tender.
Step 3
Peel and mince shallot.
Step 4
Melt a pat of butter in a pan over medium-high heat. Add the shallot and a pinch of salt. Cook, stirring for 3 minutes. Add a splash of water to deglaze the pan.
Step 5
Mince the chives. Set aside.
Step 6
Once the water has evaporated from the pan, add the steak. Cook undisturbed for 3-5 minutes each side.
Step 7
Drain the potatoes, reserving a bit of the cooking liquid. In a bowl, combine the potatoes, cooking liquid, salt, pepper, and a dab of butter. Mash with a fork until smooth and creamy.
Step 8
Remove steak from the pan, Leave the shallots over the heat. Add a dab of butter to the pan. Reduce the heat to medium-low. Cook, stirring for 1-2 mintues.
Step 9
Add the chives to the creamy mashed potatoes.
Step 10
Serve the mashed potatoes alongside the steak. Pour the shallot gravy over all.
